Black Forest Cheesecake

Chilling Time: 3-4 Hours
Serves: 12


  • For the Crust:
  • 100 g Cashew Nuts
  • 50 g Desiccated Coconut
  • 50 g Chocolate Chips
  • 2 tbs Dark Cocoa Powder
  • 2 tbs Maple Syrup
  • For the Filling:
  • 1 tin (405 g) Sweetened Condensed Milk
  • 400 g Cream Cheese, soft to room temperature
  • 1 tbs Nescafe Instant Coffee granulates
  • 1cup Dark Cocoa powder
  • 1 tbs Butter, melted
  • 1 tbs Gelatin
  • 1/3 cup Water
  • 1 cup Canned Black Cherries, pitted


  1. To prepare crust: Combine Cashews, Coconut Powder, Chocolate Chips, Coco Powder and Maple Syrup in a food processor and process to a course powder.
  2. Empty in the bottom of a spring-form cake tin and press down with a spoon to flatten. Place in fridge and allow to cool for 10 minutes.
  3. To prepare filling: combine Sweetened Condensed Milk, Cream Cheese, Nescafe, Coco Butter and Butter in a mixing bowl and beat until smooth.
  4. Hydrate Gelatin in Water, bring to heat to dissolve and add to the Cheese mixture.
  5. Fold in the cherries and pour mixture in the pan over the crust.
  6. Chill in fridge for 3-4 hours before serving.
