Mint Chocolate Brownies

  • 120 g Dark Chocolate (80% Cocoa), coarsely chopped
  • 3/4 cup Butter, cut into large cubes
  • 1 1/4 cups White Sugar
  • 1 tsp Vanilla Extract
  • 2 tsp Peppermint Extract
  • 3 large Eggs, slightly beaten
  • 1/4 tsp Salt
  • 1 cup All-purpose Flour
  • 1/2 cup Almond Powder


  1. Preheat oven to 175 degrees C. Line an 8×8 inch baking pan with foil and spray with nonstick cooking spray.
  2. Combine Dark Chocolate and Butter in a glass bowl and melt in microwave 1 minute at a time taking care not to overheat the content.
  3. Whisk in Sugar, Vanilla and Mint Extract.
  4. Add Eggs, Salt and Flour almond Powder until smooth, taking care not to over beat the batter.
  5. Pour in prepared baking tin and bake in oven for 30-35 minutes.
  6. Remove and cool on a baking rack before cutting.

Chef’s Tip: add a few sprigs of fresh Mint and drizzle with hot chocolate fudge as an optional garnish.
