Tomato & Basil Pasta Sauce

Serves: 8


  • 1/2 cup of Extra Virgin Olive Oil
  • 2 heads of Garlic (about 20 cloves)
  • 4 tbs Tomato Paste
  • 2 kg fresh Tomatoes, diced (or 5 cans crushed Tomatoes with Juice)
  • 1 tbs Salt (use half if you are using canned Tomatoes)
  • 1 tbs Light Brown Sugar
  • 1 tsp Red Chili Flakes (more if you like it spicy!)
  • 2 tsp Oregano
  • 1 cup Fresh Basil, roughly chopped



  1. In a large sauce pot, heat Olive Oil and sauté crushed Garlic until soft. Add Tomato Paste and sauté for an additional 1 minute.
  2. Add Tomatoes, Salt, Brown Sugar, Chili Flakes and Oregano and allow to simmer for 60 minutes. Turn heat down to low and keep warm.
  3. Stir in chopped Basil leaves and remove from heat.
  4. Serve with your choice of Pasta or allow to cool before storing in freezer for future use.


Chef’s Tip: sauce can be made in advance and kept in the freezer for up to 90 days. To defrost, place in a pot, add 1/2 cup water, cover and allow to simmer on low heat until it reaches the optimal temperature.
