Lentil Rice (Modardara)

Serves: 4-6



  • 1 cups (200 g) Brown Lentil, washed and drained
  • 3 cups Water
  • 1 tbs Salt
  • 2 tbs Olive Oil
  • 1 medium (125 g) Onion, sliced
  • 2 cup (400 g) American rice
  • 1 tsp Cumin powder
  • 1 tsp Cinnamon powder
  • 4 pods Green Cardamom
  • 4 cups Chicken Stock


  1. Place washed Lentils in a pot, add Salt and cover with Water, bring to boil, reduce heat and simmer until lentils are half cooked. Drain excess water and set half cooked lentils aside.
  2. Heat Olive Oil in a medium pot, fry Onion until golden in color, remove half the onions and set aside for garnish.
  3. Add Rice, Spices, and Cardamom to remaining onions in the pot. Sauté for about a minute and add Chicken Stock.
  4. Bring to a boil, reduce heat, and add previously half cooked lentils to the pot, cover and simmer on low heat for about 20 minutes or until rice is fully cooked and liquid is absorbed.
  5. Dish out rice on a large platter, and garnish with fried onions.

Tip: this dish can be served both hot or cold and is best with a side of fresh yogurt or salad
