Oatmeal & Raisins Cookies

Serves: 24 cookies


  • 150 g unsalted Butter, room temperature
  • 200 g Light Brown Sugar
  • 1 large Egg
  • 2 tsp Vanilla Extract
  • 100 g all purpose Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 tsp ground Cinnamon
  • 250 g old-fashioned Rolled Oats
  • 50 g Walnuts
  • 100 g dark Raisins


  1. Preheat oven to 180 degrees C and place oven rack to middle position.
  2. In a mixing bowl cream the Butter and Sugar until creamy and smooth. Add the Egg and vanilla extract and beat to combine.
  3. In a separate bowl, whisk together the Flour, Baking Soda, Salt, and round Cinnamon.
  4. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the Oats,  Walnuts, and Raisins.
  5. Using an ice-cream scooper, place equal amount of cookie dough on a cookie sheet lined with wax paper. Allow about 5 cm space between cookies. Using the back of a spoon gently push and flatten each cookie dough to about 1.5 cm thick. Wet the back of the spoon to prevent sticking to the dough.
  6. Bake the cookies for about 12 – 15 minutes in a pre heated oven or until light golden brown around the edges but still soft and a little wet in the centers. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
