Orange Chocolate Macrons

Serves: 50-60 pcs


  • For Macarons:
  • 110g Icing Sugar
  • 60g fine Almond Powders
  • 30 g Ground Black Sesame Seed
  • 2 Egg Whites, at room temperature
  • 40g Castor Sugar
  • 15g Black Sesame Seeds
  • For Ganache Filling:
  • 150 g Dark Chocolate (75% Cocoa), broken into pieces
  • 100 ml Cream
  • 1 tsp Orange Extract
  • 50 g Icing Sugar


  1.  Preheat the oven to 200°C. Line baking sheets with parchment paper or a silicone mat.
  2.  Using an electric mixer on low speed, mix Sugar, Almond Powder, ground Sesame Seed, Egg Whites one at a time, Castor Sugar to form a cake batter consistency, without being runny. Beat mixture on high speed until a slightly soft peak can be formed.
  3. Using a pastry bag and plain tip, pipe out Macarons onto lined baking sheet to about 3-4 cm. do not flatten as they will spread with heat.
  4. Sprinkle a few Black Sesame Seeds over each biscuit and bake for 8-10 minutes in preheated oven or until the edges are slightly golden brown. Once cooked, allow to cool before attempting to remove from pan.
  5. To make Ganache: Bring Cream to boil, add Chocolate and stir until well mixed.
  6. Remove from heat, add Orange Extract and  incorporate Icing Sugar in small batches and allow to rest to room temperature.
  7. Use 2-3 tsp of the Ganache to make Macron Sandwiches. Serve chilled.
